MCP9600 - temperature reading

I've got a simple application with this MCP9600, I can read/write registers, but do not clearly understand how to read the temperature of the thermocouple.
I've attached a type K thermocouple, and configure it on register. Also did several reading tests with different config; but what's the temperature of the thermocouple I shouldread? do I only need to read the Hot junction temp (TH)?
or do I also need to read Delta + Cold temp and do some math?
Also what can we do with the raw ADC value? how to convert to temp?

    I found the data sheet provides a lot of information about interacting with this chip.
    I have been experimenting with the ESP32 and found this software provides an example of getting the temperature https://github.com/sparkfun/SparkFun_MCP9600_Arduino_Library/blob/master/src/SparkFun_MCP9600.cpp
